

A flavorful stir-fry of tender chicken, sweet pineapple, and rice, served with savory sautéed italian oyster mushrooms for a hearty, balanced meal.
1 lb Chicken
1 cup Pineapple
1/2 lb Italian Oyster Mushrooms
1 Onion
2 Garlic Cloves
1 Red Bell Pepper
1 tsp Ginger
1 cup Rice
1 tbsp Olive Oil
2 cups Chicken or Bone Broth
1 tbsp Soy Sauce
1 tsp Cayenne Pepper
1 tsp Cilantro
1 Avocado
In large skillet, heat olive oil over medium heat. Add cubed chicken and cook until cooked through & golden brown, Remove from heat and set.
Add diced onion, garlic, and red bell pepper into the same skillet. Cook until soft.
Add mushrooms & pineapple and cook for 5-6 mintues.
Stir in rice, broth, soy sauce, ginger, cayenne pepper (optional), salt & pepper. Bring to a boil
Reduce heat and simmer. Cover and simmer for 18-20 minutes until rice is cooked through.
Add cooked chicken to skillet and head through.
Serve and garnish with avocado and cilantro.
